Jaime Van Schyndel is the founder and general manager of barismo coffeebar and roastery located in Arlington, MA. Having spent many years in coffee as a barista and roaster Van Shyndel has been an outspoken voice at the leading edge of the specialty coffee community. Starting early in his career with a progressive approach to espresso, Van Shyndel has pushed for better quality in all aspects from manual brew methods, to quality sourcing, and finally in his latest act, a well executed high volume cafe in the form of dwelltime located in Mid-Cambridge. Most noted however is the community of baristas and customers that has grown up around Van Shyndel and have enthusiastically supported his many projects throughout the years.
A baristas approach to roasting, Jaime Van Schyndel explains how barismo takes green coffee to market through careful roast and brew profiling. barismo’s approach to roasting is a careful balancing act that preserves origin characteristics each coffee is capable of. Years spent tasting and working with coffees as baristas has informed such an approach, and the same attention to origin characteristics has been retained with brew methods, where manual methods are chosen for the control of variables they provide. Profiling coffees to highlight such characteristics is never easy, yet very rewarding for those involved in the process. Have a chance to hear about this process and taste some of barismo’s carefully roasted and dialed in coffees.
